I've been meaning to bake and try a few of Buddy's Allergen-free cakes but didn't have a working oven, and we don't own a microwave. Well, our oven is sort of fixed now, except it cooks food in a third of the amount of time (ugh). Anyway, the cakes just require mixing with oil and milk (we used Brandless Life organic coconut oil and Pacific Foods cashew milk), baking for 10 min (3 minutes in our oven) or for one minute in the microwave, and spreading some of their scrumptious frosting on top.
We were amazed at how easy these were to make, and how good they turned out (don't mind my lack of frosting skills), considering they are gluten-free, peanut-free, dairy-free, soy-free, egg-free, corn syrup free, and tree nut free. We tried the Very Vanilla with Vanilla Bean Frosting, Chocolate Fudge with Chocolate Fudge Frosting, and Warm Spice with Salted Date Caramel Frosting cakes. I think Warm Spice is my favorite!
